Eagle’s Eye, British Columbia, Canada.

Soaring over the lakes and mountains of Kicking Horse Mountain Resort, where British Columbia and Alberta rub up against each other, Eagle’s Eye restaurant is Canada’s highest at a dizzying 2,346 metres. Named ‘Mountain Restaurant of the Year’ by The Good Skiing and Snowboarding Guide from 2002-2007, it’s lofty and pleasant inside and the food is excellent. Dine out on local salmon and beef and, if you are a hungry skier or boarder, refuel with the burger and sumptuous fries. Even if you aren’t fond of the white stuff, catch the Gondola up to the top to enjoy cuisine with a natural floorshow. As the sun goes down, over 1,000 snow-covered peaks of the Rocky, Selkirk and Purcell Mountains glow in the clear evening light. It’s especially beautiful in autumn when the leaves start showing off outrageously. If you have drunk too much fine wine from the Okanagan Valley, there are two suites upstairs, furnished with plenty of pine. They even come with your own chef, butler and mountain guide. It isn’t open year-round and reservations are essential.

La Stüa di Michil, Alta Badia, South Tyrol, Austria.

Squished between the Veneto region to the south and the Austrian Tyrol to the north, South Tyrol was part of Italy until 1919. Subsequently both Italian and German are spoken widely throughout, creating a curious blend of cultures and cuisine. And it’s in the charming valley of Alta Badia that you will find Michelin-starred La Stüa di Michil at the Hotel La Perla. Housed in a 17th century farmer’s barn decked out with candles, wooden beams and traditional decorations, chef Arturo Spicocchi uses produce from the hotel's vegetable and herb garden wherever possible and the vast wine cellar guarantees wide smiles and sometimes the need for Nurofen. If you are among friends, opt for the private dining room. Towards the end of the meal you will be given a view straight into the kitchen where, with the lights off, chefs prepare your dessert with torches strapped to their heads as lasers bounce around to the thump of dance tunes. Not your average crème brûlée. The restaurant is only open in the evening and you have to book.
